I like to cook...
...and bake.
I won't call myself a pro by any means but it is a job requirement for me so I might as well try and perfect it as much as possible. I don't know about you but there are weeks when dinner seems totally impossible to make. No, not cuz I'm too busy or anything like that, it's just that I've run out of things to make. I am one who has to plan ahead or it is really hard to whip things up spur of the moment. (Props to all of you who can do this...I'm jealous!) I keep my shelves stocked so that I have anything I need and can plan a week ahead. It is usually on Monday when I figure out that I didn't plan the week's meals out because I was playing all weekend. And it is always those Mondays when we've had shepards pie and haystacks one two many times the last couple weeks and everything I can make just sounds boring or is missing something. Those days when I think about what to have for dinner all day long until it's 5 o'clock and Jeremy's home and there isn't any food ready. I think part of the problem is that I have become a little more health concious and the fast, easy meals like frozen stuff or fast food are just way too unheathly and I can't get myself to buy them.
To help solve my dilema, I was wondering if some of you would share some of your favorite meals with me so I can add them to our menu so I don't run out of ideas so fast. It can just be a list of things you make to refresh my memory of possible meals OR if you have some personal recipes of favorite that would be great too! (any suggestions on how to spruce up the side dishes would be helpful too because canned green beans and green salad are getting old!)

It may give you some ideas. And I've found I can always substitute ingredients to make it more healthy. Good luck, I have too many picky eaters to have much variety with our meals.
I so know how you feel! We've had haystacks of few too many times lately too!! Anyway, you have to check out picky palate, I absolutely love it! I have a link on my blog. They're pretty easy recipies. We love the ciabatta lasagna dish, which is super easy!! And here's a super easy recipe my mom just gave me. You just throw in 3-4 frozen chicken breasts, a can of black beans, a can of corn, a jar of salsa, and a packet of taco seasoning in a crock pot and cook it on low for about ten hours. Shred the chicken with forks, and we put it burritos or enchiladas or whatever...it's way yummy!!Happy Cooking!!

I try to fix 4 "real" meals a week, then the days in between I try to make something creative with the left-overs. My neighbor plans out the meals for a month then just starts over each month. I wish I was that organized, but I try to at least plan out the week (before I go to the grocery store) and then I always have what I need on hand. As for side dishes, I need major help on that one too! You are such a cute wife and mom!
